Here is my favourite recipe for Anzac biscuits! Why not give them a try before Anzac Day on the 25th of April?
1 cup rolled oats
1 cup plain flour
1/2 cup sugar
3/4 cup desiccated coconut
2 tablespoons golden syrup
1/2 cup butter
1/2 teaspoon baking soda
1 tablespoon boiling water
Pinch of salt
Mix oats, flour, salt, sugar and coconut together in a large bowl.
Melt golden syrup and butter together.
Mix baking soda and boiling water then add to the butter/ golden syrup mixture.
Combine wet and dry ingredients.
Spoon tablespoons of mixture onto a baking tray and press down with a fork.
Bake in a slow oven (150 – 160 degrees Celsius) for 15 – 20 mins (depending on if you like soft or crunchy biscuits).
We have made these biscuits twice with the children and they have been successful both times, not to mention the hundreds of times I have made them at home. I would love to hear how you get on!
